I wasn't officially tagged, but when I saw this over on Paris Tarts, I wanted to do it! Its probably the most fun meme I've ever seen.

The rules of the tagging:

I'm half Chilean, took 5 years of Spanish in school and I still can't speak Spanish.
My bedroom is usually a mess, but I have OCD tendencies about the state of cleanliness in every other part of the house.

1) I lived in the same house throughout all my years in school.
2) I don't like to wear socks and avoid it when possible.
3) I have never been out of the country. Not even to Canada or Mexico.
4) I would like to skydive someday.
5) I love reading, but don't do it often enough.

Recipe Tag - Pita Pizza

Julie tagged me to share a recipe.
I'm not one to cook much more than pasta or go full out with huge pans of lasagna, both of which don't really come from a recipe.
This is one that has been on my radar to try out however.

Get your pizza fix with this guilt-free personal pie. It's cheesy, nutritious (only 279 calories!) and won't take you more than 12 minutes to make!
PITA PIZZA

Serves 1

INGREDIENTS
1 tsp olive oil
1 6-inch whole-wheat pita
1/4 cup canned, diced tomatoes
1 basil leaf
1/4 cup torn fresh spinach leaves
1/4 cup roasted red peppers
1/4 cup shredded part-skim mozzarella

PREPARATION
Drizzle olive oil over pita. Mix tomatoes and basil and spread over pita. Add spinach leaves. Layer peppers over the spinach and top with mozzarella. Broil 4 minutes or until cheese melts.

THE SKINNY
279 calories per pizza
10.5 g fat (4 g saturated)
33.5 g carbs
6 g fiber
15 g protein"

I'm sure any preferred toppings would work on the pita bread crust so get creative with these personal pizzas! Let me know when you try it and I'll do the same.
